Broccoli Cheese Cups (Makes 2-3 portions)
65 g broccoli
1 tsp olive oil
Good pinch of salt and pepper
15g cream cheese
25g grated cheddar cheese
Steam the broccoli by dipping in boiling water for 3-4 minutes. Remove, chop into small pieces. Season with salt, pepper, olive oil and set aside. Whisk the egg and cream cheese. Stir in broccoli and cheddar cheese. Stir the lumpy mixture and spoon into small ramekins or a greased muffin pan. Bake in a preheated oven 200C for 20 minutes until well risen and golden brown. Can be kept in the fridge for 3-4 days and warmed before eating. Makes a great side for dinner, a lovely accompaniment for tea time and a delicious healthy snack for kids packed lunch.
