1 boneless chicken breast chopped
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 red onion
6 oz. fresh peeled and deveined prawns
2 ripe chopped Roma tomatoes
1 lb. linguine pasta
1 cup chicken stock
2 tsp Cajun spice*
Salt and pepper
1 tsp ground garlic
2 tbsp. olive oil
Heat oil in a large pan or wok. Sprinkle Cajun seasoning on chicken and sauté till light brown. Add sliced peppers and onions and fry on high heat.
Add garlic, salt, pepper, tomatoes and stock. Cover and simmer on low heat for 5-6 minutes. Uncover and add prawns. Stir fry until prawns are cooked and stir in boiled pasta.
Garnish with fresh chopped parsley and a squeeze of lime juice.
*To make you own Cajun spice
Mix equal amounts of salt and garlic powder with half the amount of black pepper, chili flakes and dried oregano and thyme.
