Quick Recipe Chopped Chicken Salad



One bunch iceberg lettuce

One grilled chicken breast

One cup sweet corn kernels

One tomato chopped

One ripe avocado chopped

Half cup feta cheese

Handful of tortilla chips


3 tablespoons olive oil

1 tablespoon mustard

1 tablespoon chopped fresh coriander

Half teaspoon sugar

Salt and pepper

Juice of half a lemon


Nicely wash all vegetables. Tear lettuce into bite size pieces. Chop tomato and avocado. Thinly slice the grilled chicken. Add corn and crumble feta cheese.

Combine all ingredients for the dressing and pour over salad prior to serving.

Just before serving break tortilla chips and sprinkle on top.
