PEA AND FETA ON SOURDOUGH TOAST RECIPE

Looking for light lunch ideas? Try this pea and feta dish, served on toasted sourdough bread.

Total time: 25 minutes

Ingredients:

  • 200g frozen peas, cooked
  • 1 1/2 tbsp fresh minted, finely chopped
  • Zest from ½ lemon
  • Juice from ½ lemon
  • 2 tbsp olive oil
  • Salt and pepper
  • 75g feta cheese, crumbled
  • 4 slices of sourdough bread
  • 2 garlic cloves

RECIPE:

STEP 1: PREPARE THE PEAS

Place cooked peas in a bowl. Add the mint, lemon zest, lemon juice and olive oil. Season with salt and pepper. Then combine with a fork or masher. Next add the crumbled feta cheese and mix.

STEP 2: PREPARE THE SOURDOUGH BREAD

Toast the slices of sourdough bread, then rub with garlic cloves. Spoon over the peas, add more crumbled feta if desired and finish with a last drizzle of olive oil.
